Gnocchi with Sausage and Plum Tomato in a 4-Cheese Cream Sauce with Fresh Basil

This entire from scratch meal was made in about 30 minutes start to finish. Just because I like to eat well, doesn’t mean I want to spend all day/night in the kitchen. 🙂

Super easy… While water is on to boil, take 1 pound of Italian sausage and brown it. The sausage will create some oil while browning and I just added some Cremini mushrooms and 1 diced shallot 1/2 way through with a little sea salt. My water for the Gnocchi was boiling so they got added to lightly salted water. Gnocchi is done when all are floating. I halved and pan roasted some grape tomato while Gnocchi was cooking. The sauce was super easy. I just took some hard Italian cheeses I had and melted them in with 1/4 cup heavy cream, 1 tsp. butter, a couple tbsp. water and whisked quickly, added some sea salt and pepper, topped with fresh basil and Voila!
